Davao’s Culinary Spotlight: A Night to Remember
Let me tell you about an incredible night at Dusit Thani Davao. It wasn’t just any event; it was the Kitchen Arena, the absolute highlight of the Davao Food and Wine Festival 2025. Imagine a three-week celebration of Mindanao’s amazing ingredients, the passionate chefs who bring them to life, and a community dedicated to showcasing their culinary identity. This particular evening, held at the beautiful Madayaw Café, was a whirlwind of talent, precision, and heartfelt stories told through food.
The Visionaries Behind Mindanao’s Culinary Voice
This whole festival, a truly ambitious undertaking, was steered by Chairperson Carmina del Rosario. Her vision was clear: to unite chefs, producers, partners, and enthusiastic audiences. Their shared goal? To make Mindanao’s culinary voice louder, clearer, and heard across the nation and even on the international stage. It’s about bringing the unique flavors and stories of the region to a much broader audience.
An Evening of High Energy and Insightful Commentary
The Kitchen Arena program itself was so engaging, thanks to our fantastic co-hosts. Kyle Jennermann, known from Becoming Filipino, brought an incredible warmth and infectious enthusiasm that perfectly matched the electric atmosphere of the evening. Right alongside him was Kim Liu from Varigoods and Kozara Yakitori. Kim was brilliant, offering really insightful culinary commentary and making all the fast-paced action on stage totally understandable for everyone in the audience.
Meet the Esteemed Judges
Adding a vital layer of depth and balance to the competition was our distinguished panel of judges. We had JC Lo, a highly respected food columnist, known for his refined and thoughtful critiques. Then there was Pepper Teehankee, a seasoned food and travel writer who brought a broad global perspective to the table. And finally, Nicole Hao-Bian Ledesma, an impressive hospitality entrepreneur and industry leader. She heads the JIB International Center for Hospitality and Culinary Arts and is very active with DATA (Davao Tourism Authority). Their combined expertise ensured a fair and insightful evaluation of each dish.
Four Chefs, Unique Culinary Identities
The heart of Kitchen Arena lay with the four chefs who graced the stage. Each brought a truly unique culinary identity to the competition, showcasing the incredible diversity within Mindanao’s food scene.
We had Chef Rhea Rizzo from Mrs. Saldo’s. Her cooking is a beautiful blend of refined techniques and heartfelt passion, deeply shaped by global influences.
Then there was Chef Andrew Malarkey of Wild Siargao. His culinary style is bold, often described as “GLOCAL,” reflecting a vibrant island character that’s both local and global.
Chef Jeramie Go from Pilgrim brought incredible discipline to the kitchen. Trained in Toronto, his technique is top-notch, yet it’s firmly grounded in the rich terroir of Mindanao.
And representing the home team, we had Chef Dinan from Dusit Davao. He exemplified luxury-hotel precision, radiating calm leadership, and had a strong, undeniable presence on his home turf.
A Tasteful Prelude
The evening kicked off beautifully even before the main competition began. Guests were treated to elegant tasting stations, perfectly paired with Sula welcome cocktails and a curated selection of wines from Sommelier Selections. This was a wonderful, intimate opportunity to experience each chef’s unique culinary point of view, setting the stage for the excitement that was about to unfold.
Under Pressure: The Kitchen Arena Heats Up
True to Kitchen Arena tradition, the chefs faced the daunting task of crafting two dishes within a strict time limit. A real twist was drawing specialty equipment at random, which kept everyone on their toes. But perhaps the most exciting part was the expansive pantry, overflowing with Mindanao’s finest produce.
Imagine a treasure trove of ingredients from incredible producers like Mindanao Butchers & Co., Alsons Aquaculture and Sarangani Bay, Hijo Fresh, Mothers Produce, and Italian Specialists. We also saw contributions from Rafski, Agriya, Sula Spirits, Sommelier Selection, Sonic, Hoh Farm, Pilgrim, Buyers Link, and Malagos Farmhouse. It was a true celebration of local abundance.
The Secret Black Box: A Culinary Challenge
Adding a thrilling layer of suspense was the Secret Black Box. Its contents were only revealed moments before the competition officially began. This year, the box held three fascinating ingredients: Odong, the beloved Visayan noodle; incredibly fresh crabs sourced from Surigao; and Malagos Boracho cheese, a Davao icon that’s received international recognition. These ingredients really pushed the chefs to showcase not just their creativity, but their mastery under immense pressure. It truly challenged them to reinterpret regional staples with both technical finesse and innovative ideas.
A Night of Celebration and Culinary Triumphs
The evening culminated in a meticulously guided tasting and a final, suspenseful deliberation by the judges. Then came the moment everyone was waiting for: the announcement of the Kitchen Arena Champion. The title went to Chef Rhea Rizzo of Mrs. Saldo’s! It was a moment of pure joy, celebrated not just by her fellow competitors but by the entire culinary community of Davao.
The audience also had their say, and the Crowd’s Favorite award was presented to Chef Andrew Malarkey of Wild Siargao. His dish clearly resonated strongly with guests throughout the evening, a true testament to its vibrant appeal.
Dusit Thani Davao: A Pillar of Culinary Growth
This year’s Kitchen Arena truly highlighted Dusit Thani Davao’s unwavering commitment to nurturing local talent. They’re not just supporting the culinary community; they’re actively championing Mindanao’s rich heritage. This event reinforced the hotel’s vital role as a proud partner in elevating Davao, positioning it as one of the Philippines’ most vibrant and compelling culinary destinations. It’s more than just a hotel; it’s a hub for culinary excellence and a beacon for local flavors.
